Turkey and Chipotle Bean Salad


115g shredded red cabbage
100g diced red onion
1 - 15oz can low sodium black beans, drained
1 - 15oz can pinto beans, drained
1 - 8.75oz can corn kernels
1 lb garlic italian ground turkey - cooked and cooled
45g ranch dressing (Bolthouse Farms is great!)
1 Chipotle in adobo, finely chopped
1 lime, juiced
2 tsp salt
Handful of chopped cilantro

To make:

Literally combine all ingredients in a large bowl! Add more salt/pepper to taste. 

* Chipotle in adobo are canned chili peppers in a smoky, spicy adobo sauce. Any grocery store carries them, in the international aisle. Omit if you don't like spicy foods!
** You could easily make this vegetarian by swapping the ground turkey for a plant based meat crumble!
