I don't know about you guys, but these warm temps have had me dreaming of hot summer days and all the delicious foods that we enjoy during those warmer months. I was inspired to make this nutrient dense pasta salad. It was perfect by itself as a meal, but could easily be made in larger portions to take to a family barbeque! I guarantee no one will even know it's a healthier version of a classic summer side dish.
This is what I used for one serving:
1 serving (56 grams) Banza Pasta - cook according to package directions
1 heaping cup of veggies - chopped carrots, broccoli, cauliflower
20 grams turkey pepperoni - chopped
1/2 serving (15 grams) reduced fat feta chunks
1 serving (30 grams) Bolthouse Farms Zesty Italian vinagrette
Combine once the cooked pasta has cooled - viola!!
Macros for one serving: 315 calories, 40g carbs, 9g fat, 24g protein, 7g fiber
