4Tbs Coconut Oil, MCT Oil or any Oil of your choice
1/2 Cup Diced Onions
1# Ground Beef or Pork Sausage 
4 Cups of Fresh Spinach 
4 Large Eggs
1 8oz Package of Fresh Mushrooms 
Sea Salt and Pepper to taste
Grated Parmesan Cheese (optional)

Heat the oil in a large frying pan over medium-low heat. Add the onions, mushrooms and cook for 10 minutes, until the onions are soft and light brown in appearance.
Increase the heat to medium and add the meat. Brown the meat crumbling it until cooked through, right around 5 minutes. Add the spinach, salt, and pepper and cook for another minute, until the spinach is wilted.
Push the wilted mixture to the outer edges of the pan, leaving a frying area in the middle for the eggs. Crack the eggs into the center of the pan and scramble them. Serve it warm, and sprinkle it with some of the Parmesan cheese, if you choose to.
