Low Carb Stuffed Chicken Thighs


8 Boneless, skinless, chicken thighs 

8 Slices of thin cut bacon

Stuffing of choice (see stuffing options below)

Toothpicks or string

Sugar free BBQ sauce (Optional)

Mushroom Stuffing

2 tablespoons butter

8oz mushrooms, finely chopped

1 onion, minced

2 garlic cloves, minced

½ cup chopped parsley

Salt and pepper to taste


 Prepare the stuffing by melting the butter in a saucepan. Add onions, mushrooms and garlic. Cook until the onions are tender. Add parsley, salt and pepper and cook another few minutes. Remove the mushroom stuffing from the heat and let it cool to room temperature.

Chorizo and Monterey Jack Stuffing

1 tbsp olive oil

½ pound chorizo meat

1 jalapeno pepper, seeded and minced

¼ red onion, diced

1 garlic clove minced

1 cup monterey jack cheese, grated


 Heat the oil in a skillet. Add the garlic, chorizo, onion and jalapeno and cook until vegetables are tender and chorizo is cooked through, about 6-8 minutes.

Bring to room temperature.

Stir in the Monterey jack cheese.

Sun Dried Tomato and Mozzarella Stuffing

 4-6 sun dried tomatoes, minced

3 shallots, minced

2 tbsp parsley, minced

½ tsp salt

1 garlic clove minced

1 cup mozarella cheese, grated


Mix all ingredients together until well combined.


Preheat oven to 375 degrees

If you are using thick bacon, cut each slice in half. If you are using thin/normal slices, then leave them whole. A single slice of bacon should be good for each one. I find stretching the bacon as I wrap helps to keep everything together during cooking.

Place a strip of bacon on a cutting board. Lay a chicken thigh on the bacon slice. Spoon a modest amount of stuffing on the middle of the chicken thigh. Gently wrap the chicken thigh and bacon around the stuffing. Tie with some string.

Once chicken is stuffed and wrapped, place in a shallow baking dish and bake uncovered for 35 minutes. Turn oven up to 450 degrees and cook for 10 more minutes or until bacon is browned and crisp. Remove from oven when done and plate immediately. If you leave in baking dish, make sure to drain bacon grease.


Brush with some sugar free BBQ sauce before serving.
