Black Bean Quinoa salad

INGREDIENTS

1 cups uncooked quiona

1 can Black Beans

1 Can Corn

1 Red Onion

1-2 peppers ( red, yellow any color I like the colored ones because they are sweeter i don't ever use green ) 

1- 2 limes 

1- 2 tablespoons olive oil

pinch of sea salt

1 jalapeno ( optional)

 

DIRECTIONS

boil 4 cups of water.  Once water is boiling add quinoa and let it boil for couple minutes then cover and let it simmer.   While that is going on in a seperate bowl add black beans and corn.  Chop up your red onion and peppers and add to the bowl.  Once Quinoa is fully cooked add to bowl.  Squeez fressh lime over mixture and then drizzle olive oil over the mixture.  Mix well together and then add pinch of salt.  This canbe served warm or cold.  You could also add cilantro to it as well.
