1 small onion, sliced
2 cucumbers, sliced, peeled or not ( based on your preference )
2-3 medium limes, juiced
2 Tbsp of finely chopped cilantro ( can also use parsley if your not a fan of cilantro )
2 Tbsp of extra virgin olive oil
Sea Salt to taste
To remove some of the bitterness or spiciness from the onions, place the onion slices in a bowl, sprinkle about 1/2 Tbsp of sea salt over the onions. Rub the sea salt in and then cover with water for a few minutes. Then drain and rinse the onions well.
Place the sliced cucumbers, sliced onions, lime juice, chopped cilantro, and olive oil in a bowl.
Mix well, taste and add sea salt as needed.
Serve immediately or let rest refrigerated for at least 30 minutes before serving.
This salad is best if you let it rest for 30 minutes, letting the lime juice start to pickle the cucumbers and onions.
Try serving it over your favorite salad greens, adding some tomatoes, avocados, radishes, and if you want also adding some grilled fish, shrimp, chicken, or beef. You can also spice it up by adding some jalapeños slices or your favorite peppers.
