Quinoa Power & Protein Salad


3/4 cup dry quinoa

1 pint strawberries

1 cup cherries (pitted)

2 tbsp local maple syrup

1 tsp balsamic vinegar

1 tbsp lemon or lime juice

1/2 cup almonds

2 tsp local organic raw honey

pinch or two of sea salt


Cook quinoa according to package directions

Then while being on stand-by slice the fruit and place in a large bowl

Mix the dressing- ingredients (maple syrup, balsamic, honey, lime or lemon juice, seasalt) in a small bowl and whisk right before your ready to dress.

Fluff the perfectly cooked quinoa with a fork and add to large bowl with fruit. Combine the dressing and incorporate. Serve immediately or you can chill in the refrigerator and have for a later snack.


Typically I manage to make three servings from one recipe. If your feeling adventurist, sometimes I will add plain cooked quinoa or a half to a whole cup of this recipe into my blender with my protein powder and unsweetened coconut milk or unsweetened almond milk.

Quinoa is food of high protein quality and is typically regarded as an adequate source of all essential amino acids.

Quinoa is a perfect food to include on a gluten-free diet, since it not only lacks gluten but doesn't even belong to the same plant family as wheat, oats, barley, or rye.
