Paleo Pumpkin Muffins


Makes 24 Muffins

Serving Size: 1 Pumpkin Muffin

3 cups Almond flour

1 can pumpkin

6 large eggs

2 tsp baking powder

2 tsp baking soda

1 tsp ground cinnamon ( I sometimes add just a little extra!)

1 Tbsp pumpkin pie spice

dash of sea salt

1/2 cup honey (I usually add a little less than 1/2 cup batter gets runny if add to much honey)

2 Tbsp almond butter

Preheat oven to 350 and bake around 15-18 minutes.  Grease muffin tins with coconut oil.  Mix all ingredients together then place in greased muffin tins.  I usually place my muffins in the refrigerator once they have cooled to keep longer!
