Breakfast Paleo Egg Muffins

Makes 24 Egg Muffins

INGREDIENTS

12 eggs

1 package No Nitrate Bacon(can either cook the bacon first or add raw will bake when cook the egg muffins)

1 Jar roasted red peppers

3 cups spinach

pinch of salt

pinch of pepper

Preheat oven to 350 bake for 26 minutes.  Grease muffin tins with coconut oil do not use muffin liners eggs stick to liners.  Cut bacon, peppers and spinach to desire size and add to eggs whisk together and add pepper and salt.  Fill muffin tins about 3/4 full.  ENJOY!!!! 

****When I chop up the bacon I use kitchen scissors to cut the bacon up it is easier to dice up that way. ****
